Easy Hot and Sour Soup

Ingredients:

  • three tablespoons rice vinegar
  • 2 tablespoons cornstarch
  • 6 cups lowered sodium rooster broth
  • 2 tablespoons lowered sodium soy sauce
  • three cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon Sriracha, optionally available
  • 6 ounces shiitake mushrooms, thinly sliced
  • 2 giant eggs, frivolously crushed
  • 6 ounces extra-firm tofu, drained and thinly sliced
  • 1 teaspoon sesame oil
  • 2 inexperienced onions, thinly sliced

Directions:

  1. In a small bowl, whisk collectively vinegar and cornstarch; put aside.
  2. Combine rooster broth, soy sauce, garlic, ginger and Sriracha  in a big stockpot or Dutch oven over medium warmth. Bring to a boil.
