Ingredients:

  • 2 kilos child purple potatoes
  • 2 tablespoons olive oil
  • Four cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/Four cup freshly grated Parmesan
  • Kosher salt and freshly floor black pepper, to style
